Glazed Rhubarb Cake Recipe
A very tasty recipe rhubarb cake served with a yummy sweet glaze.
2 1/2 cups all purpose flour
1/2 cup cornmeal
1 1/2 cups granulated sugar
1 Tablespoon baking powder
2 cups milk
1/2 cup vegetable oil
1 teaspoon molasses
3 cups rhubarb, chopped
2 cups confectioners sugar
1 -3 Tablespoon heavy cream
Preheat oven to 350 degrees F. Grease a 9x13 inch cake pan.
In a large mixing bowl, combine dry ingredients. Add wet ingredients and mix until just combined.
Fold in 2 cups rhubarb.
Pour batter into cake pan then sprinjle the remaining rhubarb over top.
Bake 45-50 minutes , or until a toothpick inserted in center comes out clean.
To Make the icing. Mix together confectioners sugar and cream, 1 tablespoon at a time, enough to achieve desired consistency.
Drizzle icing over cake to serve.
