Baked Chicken And Chips Recipe
This chicken is marinated in a delicious sweet and savoury sauce. Paired with a side of chips, its a great combo for a tasty dinner.
1/2 cup dark soy sauce
2 Tablespoons light soy sauce
2 Tablespoons lime juice
1/2 cup granulated sugar
1 Tablespoon cornstarch
2 cloves garlic, crushed and minced
1/4 teaspoon black pepper
3 to 4 pounds chicken breasts. (Approx. 4 chicken breasts), cut into bite sized pieces
4 Tablespoons olive oil, divided
4 russet potatoes, cut into french fries
For the chicken
Stir together the 2 different soy sauces, lime juice, sugar, garlic and pepper in a medium bowl.
Add the chicken pieces to the marinade and mix until the chicken is well coated.
Put the chicken pieces along with the marinade in a container or resealable bag. (if using a bag, be sure to let the air out before sealing.)
Marinate the chicken in the fridge for 1 hour or overnight. Turn the chicken over once in a while to allow the marinade to evenly coat the chicken.
For the chips
Preheat the oven to 400 degrees F
Slice the potatoes into french fries and put into large mixing bowl.
(Tip: the dryer the potatoes are before tossing them in oil, the crispier your fries will be)
Drizzle 2-3 Tablespoons of the olive oil over the potatoes in the bowl and gently toss to evenly coat.
Pour the potatoes onto a tinfoil lined baking sheet and sprinkle with salt.
To bake both the chicken and the chips
Put the chips into the preheated oven and bake the chips for 20 minutes, remove from oven and flip the chips for an even crisping.
Return the chips to the oven for another 10 minutes.
Meanwhile, remove the marinating chicken from the fridge. When the timer goes the second time for the chips, remove them from the oven.
Pile the chips to one side of the baking sheet and lay chicken over the other side of the baking sheet.
Using a basting brush, brush a light coating of olive oil over the chicken pieces.
Return the chicken and chips to the oven and bake for 14 minutes, or until chicken is cooked through and the juices are clear.
